A Hot Smoked Salmon Fishcake, leek and dill cream, soft-poached free-range egg and watercress oil.

B Roast Woodland Mushroom and Madeira Soup, truffle cream and parmesan crisp.

Mains:

C Slow-Braised Lamb Shoulder, rosemary and garlic jus, buttered champ mash and braised spring greens.

D Pan-Roasted Fillet of Sea Bass, crushed Jersey Royals, fennel and orange salad and shellfish bisque sauce.

Desserts:

E Treacle Tart with clotted cream ice cream.

F Vanilla Pana Cotta with roasted rhubarb compote and shortbread.
